Persimmons generally come in three types: astringent, non-astringent, and the rare brown variety. The astringent variety cannot be eaten until it is softened by reducing the tannins by ripening either artificially or naturally in the light. The non-astringent variety is commonly called the Fuyu and is squat in shape and can be consumed either firm or soft. The brown type has dark flesh and is spicier and not very common.
